Chicken Chowder

This is a recipe for a soup/chowder I've made 10 times. It's always amazing and a meal in itself. Fantastic for this time of year!! Uncle Mario, if you don't love this chowder, I'll be shocked!! :)


1/4 cup of vegetable oil
1 cup bacon bits (at Price club they sell the ready made bacon bits. By Hormel)
1 cup diced onion
1 cup each of diced celery, and red pepper
3 cloves of garlic minced
2 tbsp of thyme (fresh or dried can be used)
4 tbsp of flour
4 cups of chicken broth
2 cans of evaporated milk (can use half milk and half cream)
1 large can of diced tomatoes drained
1 large can of cream style corn
3 cups of diced, cooked chicken (I use the already cooked box of chicken breast)
1/2 cup of BBQ sauce (the Masters Choice Chipolte is the best for this recipe!!) - Can buy at A & P, Dominion and Food Basics.
black pepper to taste.

In a large soup pot heat oil, add bacon, onion, celery,red pepper and garlic. Cook until tender, about 5 minutes. Add Thyme and flour. Mix well. Stir in broth and evaporated milk. Bring to a boil and stir continuously until soup thickens slightly. Reduce heat to medium-low and stir in remaining ingredients. Cover and simmer for 10 minutes, stirring occasionally.
