Every now and then I get gems from my family, and this is one of them. My cuz, Donna sent me this recipe. For those of you who don't like noodles, I am sure you can subsitute rice. If you want to cut down on some of the fat, use low fat peanut butter. Also, depending on your tolerance for spiciness, kick it up a notch and use hot salsa. Thanks Donna for emailing me this!!!
3 - 4 chicken breasts
1 cup of fresh salsa
1 cup of peanut sauce (store bought is fine)
1/2 tsp of red pepper flakes
2 tbsp of peanut butter
1/2 package of rice noodles
In shallow baking dish spray with non-stick spray, add chicken breasts, salsa and peanut sauce and cover. Bake until chicken is done but still tender. (350 oven for approx 25 min.) While chicken is cooking prepare rice noodles (usually by pouring boiling water over noodles and let sit for 5 minutes). When chicken and noodles are done. Turn both into a skillet on medium heat with a tbsp of oil. Add pepper flakes and peanut butter and toss until noodles are coated and peanut butter is melted and mixed. Serve immediately and sprinkle chopped peanuts on top before serving...
