Pasta with Sun-dried Tomatoes and Kalamata Olives

We had left overs again tonight so here is my posting of a recipe from the past. This is a quick and easy pasta with tons of flavor. As an Italian, there are a few things that are ALWAYS in my pantry. Jars of sun-dried tomatoes marinating in olive oil, pitted kalamata olives, and capers. I prefer this dish without any protein, but it is also good if you wanted to add in chicken or shrimp.

1 tbsp olive oil
2 tbsp garlic, minced
1 jar of sun-dried tomatoes in olive oil, coarsely chopped
2 tbsp pitted kalamata olives, chopped
2 tbsp capers
1 tbsp parsley
Lite salt and pepper to taste
1/2 cup white wine, good enough to drink

Start by heating up the pan with the olive oil. Saute the garlic, make sure the pan is not to hot otherwise the garlic will burn. Once the garlic has started to become soft, add your sun-dried tomatoes and olives to the mixture and saute for about 5 minutes. Add the wine. The capers will be added at the last minute, otherwise they will break apart. Put a good size portion of the pasta on your plate and ladle the sauce over. Top with grated parmesan cheese and serve. This is a great quick and easy sauce
