Sue and Gloria’s Baked Beans

As you can read from the ingredients...this isn't very healthy....but oh are they GOOD!

4 (16-ounce) cans baked beans
1 (20 Ounce) can crushed pineapple drained
1 cup molasses
1 cup BBQ sauce
2 TBSP brown or yellow mustard
5 slices cooked bacon crumbled
1 (6 ounce) can French-fried onion rings
Salt and Pepper

Preheat over to 350 degrees

In a large bowl, mix together beans, pineapple, molasses, BBQ sauce, Mustard, Bacon, and 1/3 of the onions. Add some salt and pepper to taste. Pour beans into a 9 by 13 inch casserole dish and sprinkle the remaining onions over the top. Cook one hour in oven until beans brown and bubble.
Serve warm. We cut the recipe in one quarter for our personal consumption.

Amaretto Cheesecake

My cousin sent me this recipe...and who doesn't love cheesecake. YUMMMMMM!!!

1 cup chopped almonds
1 cup crushed vanilla wafers
1/3 cup melted butter

1 ½ tbsp. Unflavoured gelatin
¼ cup water
3 eggs, separated
1 ¼ cup sugar
1 cup warm milk
1 lb cream cheese
¼ tsp almond extract
1/3 cup Amaretto liqueur
2 cups heavy (whipping) cream

Left over whipped cream
3 tbsp. Amaretto
2 tbsp. Icing sugar
¼ cup sliced almonds, toasted


Mix chopped almonds, crushed vanilla wafers and melted butter. Press into the bottom of a 10” springform pan. Put ¼ cup water and gelatin in saucepan. Let sit for 5 minutes. Meanwhile, blend egg yolks and sugar until light. Add warm milk slowly. Dissolve gelatin over stove. Add egg mixture to gelatin. Cook until thick and then cool in the refrigerator. Blend cream cheese, extract and liqueur and add cooled custard mixture. Beat egg whites, adding ¼ cup sugar. Whip cream and add to egg whites. Add 2/3 cups cream and egg white mixture to the cheese and custard mixture. Pour over crumb base in springform pan. Take remaining cream and add 3 tbsp. Amaretto liqueur and 2 tbsp. icing sugar and put on top of cheesecake. Refrigerate. For best results prepare 24 hours in advance of serving.
