Tomato Basil Tart

1 bought pie crust
1-2 cloves garlic, minced
1 cup low-fat ricotta or shredded mozzarella cheese
2 tbsp fresh basil, chopped plus extra for garnish
4-5 large, fresh, ripe tomatoes, sliced ¼ inch thick
Salt and pepper to taste
¼ cup extra virgin olive oil

Preheat oven to 400 degrees. Line tart pan or pie plate with dough. Pierce bottom and sides with a fork. Bake until golden brown, about 8-10 minutes. Cool slightly. Spread bottom of pastry with garlic and cheese. Sprinkle with basil. Cover with tomatoes, overlapping slices to cover completely. Sprinkle with salt and pepper, then drizzle with olive oil. Bake for 20-30 minutes. Garnish with fresh basil. Cool 10 minutes. Slice in wedges and serve warm.
