Scalloped Tomatoes

This was a recipe from me paps!

I found a recipe for Scalloped Tomatoes that was delicious. I made them tonight and we really enjoyed them.

1 28 ounce can diced tomatoes do not drain
1 cup celery sliced thin
1/2 cup chopped onion
2 tablespoons flour
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon dried marjoram crushed
1/4 cup of water
dash of pepper
2 tablespoons butter
4 slices of bread TOASTED
2 tablespoons grated cheese

Preheat oven to 350 degrees.

In a sauce pan combine the tomatoes, celery, and onion. Cover and bring to a boil,reduce heat and simmer until the celery is soft about 10 minutes.

Combine flour, sugar, salt, marjoram, pepper. Blend in the water, stir into the tomatoes stirring constantly till thickened and bubbly.

Cut three slices of toast into cubes, stir into tomato mixture. Pour into a casserole or a 10x6x2inch baking dish. Bake at 350 for 30 minutes. Cut remaining slice of toast into 4 triangles. Arrange triangles down center of tomato mixture over lapping slightly. Sprinkle with the Parmesan cheese. Bake 20 minutes longer. Serve in sauce dishes. Really good....
