Tuna, Sundried Tomato, Celery and Caper Pasta

I know, this sounds weird, but it was actually pretty good. I used the Starkist creations and I used two different kinds. Starkist has a Lemon Pepper and a Herb and Garlic flavored one. I used both. I did not use any salt since the packets of tuna have enough salt in the mix.

1 lg spaghetti
Sun dried tomatoes in oil, julienned
Extra Virgin olive oil
2 packages of Starkist Tuna Creations, one Lemon Pepper and one Herb and Garlic
1 Tbsp capers, rinsed
1 celery stalk, diced
1 medium sweet onion, diced
1 shallot diced
3-4 cloves of garlic, chopped
1 pat of butter
Splash of dry white wine
Salt and pepper to taste
Crushed red pepper to taste

Boil water for pasta and cook to al dente as per package directions. Open cans of tuna and press oil into sauté pan. Add 1 Tbsp of olive oil. Add chopped celery, chopped onion, sundried tomatoes, capers and garlic. Simmer on low for about 20 minutes, adding olive oil if necessary and stirring every few minutes.
Add 1 pat of butter, white wine and more olive oil so that it will make a nice alio olio for the pasta. Add salt and pepper and /or crushed red pepper to taste. Take hot cooked pasta and toss with alio olio sauce, adding a little olive oil if necessary. Put pasta on a platter and chunk up the canned tuna over the top.
