Oriental Beef Short Ribs

I made up this recipe tonight and it actually turned out quite good. Dave loved it!

8 beef short ribs
1 cup orange juice
1 box beef stock (low sodium)
1 bunch scallions, finely chopped
8 cloves garlic, sliced
1/4 cup carrots sliced
3 tbsp soy sauce, (low sodium)
2 tsp ginger
2 tbsp crushed red pepper
1/3 cup orange juice (no pulp)
5 tsp brown sugar
3 tbsp corn starch (thickening agent)

In a large pot add olive oil. Brown the short ribs. Remove from pot. Add the scallions and the garlic and saute until soft. Add the stock and scrape off the bottom of the pot. Add the remaining ingredients except for the corn starch and bring to a boil. Add back the ribs. Once the pot is boiling, take a coffee cup and take some of the liquid. Add the cornstarch to the liquid and stir until the corn starch is dissolved and then add back into the pot. cook for about 45 minutes at about low/medium until the ribs are cooked all the way through. This was very yummy!!
