Mango Avocado Salsa

1 mango
1 red pepper
3/4 cup red onion (can use less so it's not too strong for people)
1 pkg fresh cilantro
1 Tbsp Sugar
1 tsp Salt
1 tsp black pepper (I prefer a little more)
1 Tbsp Olive oil
2 Tbsp White Wine Vinegar
And at lease 1 Ripe Avocado

This Salsa should be chunky. Chop all veggies. Peel and cut the mango and mix it all together (except the avocado) Add all seasonings and toss together. Add chopped avocado just before serving. (if you need to make this ahead of time, you may toss the chopped avocado with lemon juice to keep from turning brown. Then add to mixture but now more than a few hours ahead…)

WHEN DOUBLED - serves about 8-10. (when we double we use 3 Avocados)
