Fettuccini Alfredo with Crab, Sundried Tomatoes and Scallions

Last night was clean out the fridge night and I made this up as I went. It actually turned out rather tasty.

2 cans of crab (not imitation), reserve the liquid
1/2 jar of julienned sun-dried tomatoes chopped
1/2 of the oil from the julienned sun-dried tomatoes
2 tbsp garlic
2 large scallions chopped
1 tbsp crushed red peppers
1/4 cup of gouda cheese, shredded
1/4 cup of gruyere cheese, shredded
1/4 cup of parmesan cheese, shredded
2 tsp of flour
1/4 cup of white wine
1/2 cup of milk (I would have preferred cream but I didn't have any)

In a bowl take the crab and break it apart making sure there is no shells left in it. In a deep saute pan, heat up some olive oil. Add the scallions and garlic and saute till soft. Add the sun-dried tomatoes and the oil from the tomatoes. Saute for about 5 minutes. Add the wine and continue to saute. Add the crab and all of the reserved liquid. Continue cooking for about 5 more minutes. Add the flour and mix well. Add the milk and all of the cheese and just fold in. If it becomes to thick, add a bit more milk until it becomes the consistency you would like. Add the crushed red peppers. You shouldn't have to add salt because of the cheeses. But...if you like your food on the salty side, add to your liking. Serve over pasta.
