Dad made this for mom. Mom loved it!!
2 Tablespoons olive oil
3 Shallots, minced
2 cloves of garlic, minced
1 teaspoon curry powder
1 cup chicken or vegetable broth, low sodium
1.5 pounds large shrimp, peeled and deveined
1 tablespoon fresh lime juice
1/2 cup sour cream, low fat
1/4 cup chopped fresh cilantro
salt and pepper to taste
Heat olive oil in a large skillet over medium heat. Add the shallots and garlic and cook, stirring for 2 minutes. Stir in the curry powder and cook for 1 minute, until it is fragrant. Add the broth and bring to a simmer. Add the shrimp and lime juice and simmer until the shrimp are opaque and just cooked through about 3 minutes stirring and turning them as necessary.
Remove the pan from the heat and stir in the sour cream and cilantro. Season with the salt and pepper and serve.
