Broccoli Pasta

This is just a very simple side dish or an entree.

1 large head broccoli
8 oz of whole wheat pasta
4 tbsp butter

Cut florets from broccoli. Set florets aside. Peel broccoli stalks and cut in half lengthwise than into 1 inch pieces. Place stalks in ½ cup water and ½ tsp salt in saucepan. Cook covered for 15 minutes until soft. Transfer stalks and water to food processor with butter and ½ tsp salt and pepper. Blend till smooth. Keep sauce warm. Cook pasta in large pot of salted water. After 10 minutes add florets and cook 2 minutes more. Drain and transfer to large bowl and add broccoli sauce and toss to coat. Optional: add roasted red peppers and parmesan cheese.
