French Peach Pie

This was a recipe from my g'ma as well. I found a whole stack of her recipe cards the last time I visited her. Hope you enjoy.

1 ½ cups sifted flour
½ tsp salt
½ cup shortening
2 – 3 tbsp of cold water
4 cups sliced peaches
½ cup white sugar
¾ cup brown sugar, firmly packed, divided
1 tbsp of lemon juice
3 tbsp cornstarch

Keep ½ cup of flour mixture and set aside. Combine peaches, white sugar, and ½ cup of brown sugar, lemon juice and cornstarch. Toss lightly. Place in pie shell. Combine reserve flour mixture and ¼ cup of brown sugar. Sprinkle over the top of the peach filling. Bake in hot oven for 45-50 minutes at 450 degrees.
