Scrumptious Egg Casserole

My parents sent me this one for the blog. Enjoy!

1 1/2 lbs shredded cheddar cheese
1/4 cup butter or margarine
1 8oz can of mushrooms, chopped or sliced (I used fresh)
1/2 medium onion, chopped
1 cup of cubed ham or crisp bacon
8 eggs
1/3/4 cups of milk
1/2 cup of all-purpose flour
1tsp dried parsley
1 tsp salt

Spread half of the cheese in greased 18x9 inch glass baking dish. In a saucepan, heat butter over medium heat, sauté mushrooms and onions till tender. Let cool. Spread mushrooms and onions mixture over cheese. Top with ham or bacon and remaining cheese. Whisk together eggs and milk, flour, parsley and salt. Pour over cheese, bake in 375 f oven for 60 min. Serves 10 or 12
