Simple Coffee Cake

This is what I was hoping this blog would be used for. A friend of mine turned her mother onto my blog. She has tried a few of the recipes and wanted to share this recipe with all of you. Thanks Pam (Geri's mom) ;o)


Thanks for the great cooking, if tested about what to cook I look at your blog, it's wonderful, better than Betty Crocker. I love old recipes from family, wish I could have had some of my Grandmothers, however they both passed before I was born.

Here's a simple coffee cake:

1 18-ounce yellow cake mix
1 cup vegetable oil
4 eggs
1 cup of sour cream
3/4 cup sugar
1 1/2 teaspoons cinnamon
1 3/4 chopped nuts

Oven @ 350 Grease 13x9pan. Combine cake mix, oil, eggs and sour cream in large bowl. Beat 2 minutes with a mixer on low. Scrape sides as usual. Mix sugar, nuts and cinnamon in bowl. Spread 1/2 the batter in the pan. Sprinkle half the walnut mixture over top. Repeat with remaining batter add walnut mixture. Bake 40 minutes or until toothpick inserted in center is clean.

I used a butter recipe yellow cake mix, gave a little better flavor. Next time I make this I think I will use 3/4 of walnut mixture in middle and sprinkle what’s left on top. I thought too much on top fell off after baking. My husband and his coffee drinking buddy just love it. It's very moist.
