Pasta with Scallions and Gouda Cheese

This was a cleaning out the fridge night...We needed to use up some of the stuff and I came up with this as a side dish to grilled chicken. It was very light and tasty.

5 scallions, chopped
2 tbsp garlic
1 tbsp chicken stock
1 tbsp crushed red pepper
1 cup gouda cheese, shredded
1 tbsp lemon juice
1/2 cup parmesan cheese, shredded
2 tbsp olive oil

While cooking the pasta, saute the scallions, and garlic until thoroughly cooked, add the crushed red peppers and stock. Drain the pasta leaving about 1/4 of the pasta water in the bottom of the pot add the pasta back into the pot, add the scallion mixture, both cheeses, olive oil and lemon juice. Toss and serve. You do not need salt. The cheese adds enough salt.
