A friend of mine made this appetizer and these little guys are fantastic!!
1/2 cup olive oil
2 large cloves garlic, minced (or you can do 2 tbsp minced garlic from a jar)
1/4 cup red wine vinegar (he used marsala wine)
1 tbsp coriander seeds
1/2 tsp salt
1/2 tsp dried thyme leaves, crushed
1 1/2 lbs fresh mushrooms
In skillet, heat garlic in oil over medium heat for 2 minutes. Add remaining ingredients, except mushrooms. Heat to boiling. Add mushrooms. Cover and simmer, stirring occasionally, 5 minutes, or until mushrooms are slightly softened. Pour into medium bowl. Cover and refrigerate at least 6 hours. Serve as appetizer or as a first course on salad greens.
